POTATO SKINS APPETIZER -------------------------------------------------------------------------------------------BACK TO RECIPES

6 potatoes (6 oz. russets)
1 tablespoon olive oil
3 garlic cloves, minced
1/2 teaspoon red pepper (ground)
1 cup shredded sharp cheddar cheese
4 slices of cooked and chopped bacon
1/2 cup sour cream
3/4 cup chunky salsa
1. Scrub the potatoes and slide them in half lengthwise
2. Combine the olive oil, garlic, and red pepper and brush each potato-half with the mixture
3. Place the coated potato-halves cut-side down on a pre-heated (medium) grill
4. Grill the potatoes uncovered for about 20-25 minutes, or until they are tender. Turn half-way once during the grilling period.
5. Scoop out the insides of each potato half leaving a 1/2" shell. Brush the insides of the potato shelves with the remaining oil mixture.
6. Sprinkle the shredded cheese and bacon bits into each potato shell.
7. Return the potato skins cut side up to the grill for about 5-7 minutes or until the cheese has melted
6. When serving, top each potato skin with salsa and sour cream.
