KIM'S FAMOUS POTATO SALAD ----------------------------------------------------------------------------------BACK TO RECIPES
6-8 servings
2 pounds russet potatoes
2 tablespoons salt
8 cups water
1 stick celery
1 small red onion
Chives
1 tablespoon English Salad Cream (Heinz)
Mayonnaise
Salt & Pepper To Taste
1. Cut the potatoes into bite size square pieces.
2. Put the potatoes in a large saucepan and add 2 tablespoons of salt.
3. Bring to a boil, lower the heat, and then simmer until potatoes are tender -- approximately 30 minutes.
4. Drain and cool.
5. Dice the stick of celery and small red onion into very small pieces.
6. Toss the celery and red onion into the cool potatoes.
7. Mix the english salad cream and mayonnaise into the potatoes. Use just enough to coat the potatoes.
8. Finely chop the chives and toss them into the potato salad.
9. Salt and pepper for taste
