RECIPE BOOK -- MOJITO WINGS

MOJITO WINGS -----------------------------------------------------------BACK TO RECIPES
4-8 servings

1/3 cup orange juice
1 1/2 tsp. grated lime peel
2 tbsp. fresh lime juice
3 tbsp. extra virgin olive oil
1 tbsp. chopped cilantro
1 tbsp. grated onion
1 tsp. grated ginger
1/2 tsp. ground cumin
1/2 tsp. oregano
6 cloves of garlic, finely chopped
1 lb. chicken wings, tips removed

1. Combine all the ingredients (except chicken wings) in a blender or food processor and blend

Place wings in a large resealable plastic bag and add the marinade. Toss to coat

Refrigerate overnight, or for at least 8 hours, turning occasionally

4.
Coat grill rack with nonstick cooking spray or cooking oil and preheat grill to medium heat

5. Remove wings from marinade and grill covered for 16-20 minutes or until tender and no longer pink, turning once or twice. Discard remaining marinade
