MARINATED VEGGIE KEBABS --------------------------------------------------------------------------------BACK TO RECIPES

2 medium zucchini, trimmed and cut crosswise into 1-inch thick slices
8 medium button mushroom caps
1 medium onion, cut into 1 1/2-inch wide wedges
1 medium red bell pepper, seed and cut into 12 pieces
2 tbsp vegetable oil
2 tbsp soy sauce
2 tbsp chopped fresh cilantro
1 tsp grated, peeled fresh gingerroot
1. Combine all ingredients in a large resealable plastic bag and toss to mixe well and coat the vegetables
2. Place vegetable mixture in the fridge for about 4 hours. This helps blend all the flavors. Turn the bag occasionally
3. Preheat grill to medium-high direct heat. Coat grill rack with nonstick cooking spray, or rub with vegetable oil
4. Remove vegetables from their marinade - reserve the marinade
5. Thread the vegetables onto 10 or 12-inch metal or wood skewers, alternating the vegetables. Note: if you are using wood skewers, please soak them for 30 minutes prior to threading the vegetables
6. Grill the vegetable kebabs for about 8 to 10 minutes, or until vegetables are tender, turning once and basting with the remaining marinade
