LAMB CHOPS WITH TOMATO SALSA--------------------------------------------------------------------------------BACK TO RECIPES
4 servings

8 lean lamb loin chops, cut 1 inch thick
4 tbsp. chopped fresh basil leaves, divided
1 tbsp. olive oil
Grated peel and juice from 1/2 lime
6 medium tomatoes, peeled, seeded, and chopped
8 pitted green olives, finely chopped
1 tbsp. lime juice
Dash sugar


1. Place lamb chops in a shallow baking dish; sprinkle with 2 tablespoons of the basil. Drizzle with olive oil and lime juice; sprinkle with grated lime peel. Season with salt and pepper. Cover and chill for 1 hour or overnight

Make salsa by stirring together the tomaties, green olives, remaining 2 tablespoons basil leaves, 1 tablespoon lime juice, and sugar. Set aside

Preheat grill to medium. Remove lamb from seasonings; discard seasonings.

4. Grill chops to desired doneness, turning once halfway through grilling

5. Allow 10 to 14 minutes for medium-rare and 14 to 16 minutes for medium. Serve with tomato salsa
