GRILLED VEGETABLES----- ----------------------------------------------------------------------------BACK TO RECIPES
1 serving per 8 oz of vegetables
Assorted vegetables such as;
asparagus, summer squash, red onions, bell peppers (red, green, yellow)
Salt
Pepper
Olive Oil
1. Prepare your grill and preheat for direct-heat cooking (medium-high)
2. Rinse and drain vegetables. Trim ends and stem and seed peppers
3. Cut larger vegetables lengthwise into pieces 1/3 or 1/2 inch thick
4. Drizzle or brush vegetables with oil and sprinkle on all sides with salt and pepper
5. Lay vegetables crosswise on lightly oiled grill (keep charcoal grill uncovered, keep gas grill lid down)
6. Cook vegetables, turning once with tongs, until tinged with brown on both sides - about 8-10 minutes total. Serve warm or at room temperature
