GRILLED TOMATO BASIL PIZZA--------------------------------------------------------------------------------BACK TO RECIPES

2 tbsp extra virgin olive oil
1 clove garlic, minced
1 large tomato cut into 1/2-inch thick slices
1 12-inch pre-baked pizza crust
1 cup shredded mozzarella cheese, divided into 1/2 cup servings
3 tbsp thin strips of fresh basil
2 tbsp shredded parmesan cheese
Crushed red pepper flakes
1. Preheat grill to medium direct heat and coat your grill rack with nonstick cooking spray or rub with vegetable oil
2. Combine the olive oil and garlic in a small bowl and brush the tomato slices with the olive oil-garlic mixture
3. Place tomato slices on the grill and grill them covered for about 2-3 minutes per side to lightly char them. Remove the tomatoes from the grill and place them on a plate to rest
4. Brush pizza crust with remaining olive oil-garlic mixture and sprinkle with 1/2 cup mozzarella cheese and 2 tablespoons of the fresh basil. Top with the grilled tomato slices. Sprinkle with the remaining mozzarella and parmesan
5. Plaze your pizza directly on the grill and grill, covered, for about 7-9 minutes or until the bottom of the crust is evenly browned, the topping is hot and the cheese is melted. Rotate once if necessary to cook the crust evenly
6. Remove your pizza from the grill and sprinkle with the remaining 1 tbsp. of fresh basil. Serve with the crushed red pepper flakes (if desired)
