GRILLED TOMATO & BASIL SOUP --------------------------------------------------------------------------------BACK TO RECIPES
4 servings
3 pounds of ripe tomatoes
1 cup fresh basil leaves
3 tablespoons of olive oil
1 tablespoon of black pepper
1 tablespoon of salt
3 cloves of garlic, minced
1 shallot, minced
Worcestershire sauce
Tabasco sauce
1. Pre-heat your grill to medium heat
2. Combine olive oil with salt and pepper
3. Cut tomatoes in half and brush with olive oil mixture (there will be some olive oil mixture left over -- keep it for later)
4. Place tomates cut side down on your grill and cook for about 3 minutes with lid closed
5. Remove tomatoes from your grill when they are browned and the skin is a little loose. Set them aside to cool
6. When tomatoes are cool, remove their skin and seeds
7. Place tomatoes in a food processor or blender with remaining olive oil mixture and remaining ingredients. Blend until smooth
8. You can serve this soup either cold or hot. We suggest you keep the soup in the fridge overnight to let all the flavors blend
7. If you want to serve the soup hot, then place the mixture into a large saucepan and bring to a simmer to warm through
