RECIPE BOOK -- GRILLED SUMMER SQUASH

GRILLED SUMMER SQUASH -------------------------------------------------------BACK TO RECIPES
4 servings

12 oz. yellow summer squash, such as zucchini and / or crookneck
12 oz. green zucchini
1 1/2 tbsp. Olive Oil
1 garlic clove, minced
2 tbsp. fresh mint leaves, slivered
Salt to taste (about 1/8 tsp)
Pepper to taste (about 1/8 tsp)
Squeeze of fresh lemon juice

1. Preheat grill to medium-high.

After rinsing & drying squash , cut each into half lengthwise. Then cut into 1-inch pieces

Mix vegetables, olive oil, garlic, salt, and pepper in a bowl

4. Using a grill sheet or grill basket, please vegetables on your grill and cook for about 8 to 10 minutes, shaking the grill basket a few times.

5. Remove vegetables from grill and return to the bowl. Add the mint leaves, squeeze of lemon juice and more salt & pepper to taste

6. Serve warm or at room temperature
