GRILLED SALMON SPINACH SALAD -----------------------------------------------------------BACK TO RECIPES

4 cups fresh spinach leaves
1 avocado, seeded, peeled, and diced
1 1/2 cups cherry tomatoes, halved
1/4 to 1/3 cup crumbled goat's-milk cheese
1/2 cup chopped walnuts, toasted
1/2 cup balsamic vinegar
1/4 cup olive oil
4 6oz. salmon fillets
1/4 tsp. salt
1/4 tsp. pepper
1. Coat grill rack with nonstick cooking spray, or cooking oil and preheat your grill to medium
2. Combine spinach, avocado, tomatoes, goat cheese, and walnuts in a large bowl and toss gently
3. Combine balsamic vinegar and olive oil in a small bowl. Brush 1/4 cup of the balsamic mixture over the salmon fillets and season with salt and pepper
4. Grill the salmon, covered for 4 to 6 minutes on each side or until the fish flakes with a fork
5. Serve the salmon over the spinach leaves and drizzle with (or serve in a separate bowl) the balsamic mixture
