GRILLED RED POTATOES WITH HERBS --------------------------------------------------------------------------------BACK TO RECIPES
6-8 servings
14 medium red potatoes (about 4 pounds)
1/4 cup olive oil
2 teaspoons dried dill
2 teaspoons dried thyme
Kosher salt to taste
Freshly course-ground black pepper to taste
1. Preheat grill to medium direct heat. Coat grill rack with nonstick cooking spray, or rub with vegetable oil
2. Cut potatoes into 1/8 inch thick rounds
3. In a large bowl, combine pototoes, oil, dill, thyme, and salt and pepper
4. Grill the coated potatoes, turning occasionally, until tender -- about 10-15 minutes. Grill them over medium heat.
5. Transfer the potatoes to a serving bowl. Sprinkle with fresh herbs of your choice, if you so choose
