RECIPE BOOK -- GRILLED POTATO SALAD

GRILLED POTATO SALAD ------------------------------------------------------------------------BACK TO RECIPES
4 servings

1 lb. of small red potatoes
2 strips of bacon
1 clove of garlic, minced
1/2 cup balsamic vinaigrette dressing
2 1/2-inch thick slices of yellow onion
1/2 cup sliced celery
1/3 cup sliced radishes
1 tbsp. chopped fresh parsley


1. Preheat grill to medium-high direct heat. Coat grill rack with nonstick cooking spray, or rub with vegetable oil

Cook potatoes in simmering salted (1 tsp.) water for about 5 to 8 minutes (you should be able to pierce through the potato with a sharp knife when done) Drain potatoes well

3. Cook bacon until crisp, and set aside. Cook garlic in bacon drippings. Remove pan from heat

Stir in the balsamic dressing, add the potatoes and toss to coat

5. Remove potatoes from the dressing (reserve the dressing). Brush onion slices with dressing. Place potatoes and onion slices on the grill. Grill them, covered, for about 10 to 12 minutes or until tender and potatoes are slightly charred. Remove from grill

Cool slightly. Crumble bacon and add to remaining dressing. Cut potatoes and onions into bite-size pieces. Combine the potatoes, onions, dressing mixture with bacon, celery, radishes, and parsley in a bowl and toss well to coat. Serve warm
