RECIPE BOOK -- GRILLED PINEAPPLE RINGS

GRILLED PINEAPPLE RINGS---------------------------------------------------------------------------BACK TO RECIPES
4 servings

1 pineapple, peeled, ends trimmed
2 tbsp firmly packed brown sugar
1 tbps lime juice
1/4 cup sweetened, flaked, dried coconut
1/4 cup chopped, roasted and lightly salted peanuts or cashews (optional)


1. Prepare your grill and preheat for direct-heat cooking (medium-high)

Cut pineaple crosswise into 1/2-inch-thick slices, cut out the core from each slice and discard

3.
In a small bowl, mix brown sugar and lime juice and brush onto both sides of the pineapple slices with a pastry brush

4. Lay pineapple slices on your lightly oiled grill and cook, turning once, until pineapple is hot and tinged with brown on both sides, about 8 minutes total

5. Serve your pineapple slices with vanilla ice cream, and sprinkle with coconut and peanuts
