GRILLED CHICKEN WITH BASIL DRESSING---------------------------------------------------------------------------BACK TO RECIPES

6 boneless skinless chicken breasts
2/3 cup extra virgin olive oil
1/4 cup fresh lemon juice (can be used from concentrate, but preferably fresh)
1 1/2 teaspoons of fennel seeds
1 1/2 teaspoons of salt
Freshly ground black pepper
1 cup basil leaves (lightly packed)
2 cloves garlic
1 teaspoon grated lemon zest
1. Whisk 1/3 cup of the olive oil with 3 tablespoons of lemon juice, the fennel seeds, some of the salt and some pepper in a plastic sealable bag
2. Add the chicken breasts to the bag and massage the marinade into the chicken meat
3. Refrigerate for at least 30 minutes and up to 1 day. Turn and massage the chicken occasionally
4. Blend the basil leaves, garlic, lemon zest, remaining lemon juice until smooth. Salt and pepper to taste
5. Gradually pour the remaining olive oil into the basil mixture
6. Grill the marinaded chicken on a medium-high pre-heated barbecue. About 5-7 minutes each side
7. Plate the chicken and drizzle the basil sauce over it.
