1 lemon
2 cups coarsely chopped fresh ginger with peel
2 cups water
3/4 cups sugar
Ice cubes
6 cups selzer water
Lime wedges, for server
1. Remove the zest of the lemon with a vegetable peeler, taking care not to include too much of the bitter white pith. Finely chop the lemon zest and ginger in a food processor or by hand.
2. Transfer the lemon-ginger mixture to a medium saucepan, add the water and sugar, and bring to a boil. Reduce the head and simmer, partially covered, for 15 minutes. Strain the mixture, pressing on the solids, and cool.
3. For each serving of ginger ale, pour 1/4 cup of the syrup into a tall (about 10- to 12-ounce) glass filled withice and top wiht about 3/4 cup selzer water. Serve with a lime wedge.
