CHICKEN AND VEGETABLE KEBABS -----------------------------------------------------------BACK TO RECIPES
2 servings

1/2 cup fresh lemon juice
1 tbsp. olive oil
2 cloves garlic, minced
2 tbsp. chopped fresh mint
1/2 tsp. salt
1/4 tsp. freshly ground pepper
1/2 package of portobello mushrooms, sliced (about 6 oz.)
1/2 red bell pepper cut into 1-inch pieces
1/2 red onion, cut into 1-inch pieces
1/2 lb. skinless, boneless, chicken breasts, cut into 1-inch pieces

1. In a small bowl, whisk together lemon juice, olive oil, garlic, mint, salt, and pepper

Assemble vegetables and meat on 2 long or 4 short skewers (if using wooden skewers, soak them in water for about 30 minutes prior to grilling to avoid burning the wood) alternating mushrooms, red bell pepper, red onion, and chicken

Place skewers in a glass dish and pour lemon juice mixture over the kebabs. Cover and refrigerate for 30-60 minutes

Spray grill rack with nonstick cooking spray and preheat grill to medium heat

5. Grill skewers, covered for 5 to 7 minutes each side or until chicken temperature measures at 165 degrees F.
