CEDAR-PLANKED SALMON -------------------------------------------------------BACK TO RECIPES
6-8 servings
1 Cedar Plank for grilling (about 16 inches long and 7 inches wide and 1/2 inch thick)
1 whole salmon filet with skin (about 3 pounds)
3 tbsp of fresh lemon juice
2 tbsp of olive oil
1/4 cup minced fresh chives
1/2 tsp. kosher salt
1. Place Cedar Plank in a tray of water. Plank should be covered and should soak for at least 2 hours (if you don't soak the plank, it will burn on the grill)
2. Preheat your grill to medium
3. Rinse salmon and pat it dry. Place salmon skin-side down on plank (after the plank has been soaking for at least 2 hours)
4. In a small bowl, whisk the lemon juice, olive oil and chives. Spoon this mixture over the salmon and then sprinkle with the kosher salt
5. Place plank on the grill over indirect heat and cook until the salmon is opaque, but still moist in the center (cut a small opening in the center to test doneness) Grill lid should be closed during cooking process. Grill for about 25-30 minutes
6. Serve salmon on the plank. Note: the plank will continue to cook the fish, so we suggest you serve the salmon immediately
