1 lb. beef top round steak cut 1-inch thick (fat trimmed off)
1 cup italian salad dressing, divided into 3/4 and 1/4
3 tbsp. dijon mustard or brown mustard
12 whole tiny new red potatoes
2 small zucchini, cut into 1/2-inch thick pieces
1. Place steak in a resealable plastic bag in a shallow dish
2. Combine 3/4 cup of salad dressing and mustard together in a small bowl
3. Pour salad dressing mixture over the steak and marinate the sealed bag of steak refrigerated for 5-12 hours, turning occasionally
4. In a medium saucepan bring a small of amount of water to the boil and add the small red new potatoes. Simmer, covered for 15 minutes or until almost tender. Drain, and halve any larger potatoes
5. Coat grill with nonstick cooking spray or cooking oil and preheat grill to medium
6. Drain steak and discard marinade. On long skewers alternate the steak, potatoes and zucchini
7. Grill skewers uncovered for 12-14 minutes or until potatoes are tender and meat is desired doneness, brushing frequently with the 1/4 cup reserved salad dressing mixture
