FINGER-LICKING BABY BACK RIBS

4 servings

1/2 cup Rib Rub, recipe below
4 slabs back ribs, skin removed
1 hickory log
Basting Liquid, recipe below
1 1/2 cup BBQ sauce

Rib Rub:
1 cup brown sugar
1 cup kosher salt
1 cup paprika
3/4 cup garlic powder
1/2 cup onion powder
1/2 cup chili powder
1/2 cup cayenne pepper
1/4 cup dried oregano
1/4 cup ground black pepper
1/4 cup ground cumin

1. Mix the above ingredients together and store in an air-tight container

Basting Liquid:
1/2 cup white vinegar
2 tablespoons lemon juice
2 tablespoons Worcestershire sauce
2 dashes hot sauce
Water

1. Mix the above ingredients together in a spray bottle and shake to mix thoroughly. Refrigerate until you are ready to use it.

To Prepare Your Baby Back Ribs:

1. Taking 1 tablespoon of Rib Rub, evenly season the rack of ribs on both sides. Place seasoned ribs (covered) in the refrigerator for at least 5 hours.

Smoke the ribs concave side down for 2 hours and 45 minutes at 220 degrees F, using hickory wood.

3.
After the first hour of smoking, spray ribs with basting liquid every half hour until the 2 hours are up.

4. After 2-3 hours, remove ribs, coat them with your favorite BBQ sauce and allow them to rest.

5. Place them back on the grill, continue indirectly cooking for 30 to 45 minutes.

6. Finally, transfer the ribs to the "direct heat" part of the grill and cook for 15 more minutes, or until the BBQ sauce is caramelized.
