ASIAN BARBECUE SAUCE ------------------------------------------------------------------------BACK TO RECIPES
12 serverings (4 CUPS)
2 tablespoons minced garlic
1 tablespoon minced ginger
2 red onions, 1/2-inch dice
2 tablespoons hot sauce (e.g. sambal)
2 cups hoisin paste
1 cup drained, whole stewed tomatoes
1/2 cup fresh lime juice
Kosher salt
Freshly ground black pepper
Cooking oil (canola, vegetable oil)
1. On your grill's sideburner (or on your stove) cook the garlic, ginger, and onions in a saucepan which has been lightly coated with oil. Cook for about 5 minutes
2. Add the hot sauce, hoisin paste, and stewed tomatoes to the saucepan
3. Also add the lime juice, and then season with the salt and pepper. Check the flavor to make sure it's seasoned properly
4. Simmer the sauce until it has reduced by 10-15%
5. Once reduced by about 10% place your sauce in a blender and blend until the sauce is smooth
6. Wait for the sauce to cool to room temperature and then transfer it to an airtight container
7. Use this sauce to baste dishes such as baby back pork ribs, or to top any meat dish
