SPICY APRICOT GLAZED PORK SPARERIBS -------------------------------------------------------BACK TO RECIPES
4 servings
4 lb. pork spareribs
2 tsp. ground cardamon
1/2 tsp. black pepper
1/4 tsp. ground red pepper
1/4 tsp. salt
1/4 tsp. garlic powder
3/4 cup apricot spread or preserves (all fruit)
1/2 cup barbecue sauce
1 tsp. dry mustard
1. Cut ribs into 4 to 6-rib portions
2. Combine cardamon, black pepper, red pepper, salt and garlic powder in a small bowl
3. Rub dry mixture onto both sides of the rib pieces
4. Lightly coat 2 pieces of heavy-duty foil with nonstick cooking spray or cooking oil (size of foil: 24" x 18") Place the ribs (1/2 on each piece of foil) in the center of the foil sheet. Place 4 ice cubes on top of each set of ribs
5. Seal the foil into packets by double folding the sides and ends of each foil sheet. Make sure to leave room for heat expansion. Place each packet onto a baking sheet
6. Stir together the apricot spread, barbecue sauce, and dry mustard and set aside
7. Coat the grill rack with nonstick cooking spray or cooking oil and preheat the grill to medium
8. Slide each foil packet off the baking sheet onto your grill rack. Grill, covered over medium heat for about 50 minutes
9. Carefully open 1 end of each packet and allow the steam to escape. Once the steam has escaped, completely open each packet and transfer the ribs to the grill rack.
10. Brush the ribs with the barbecue sauce mixture and continue grilling for about 10 minutes more, brushing with the sauce and turning often
